Shells and Cheese

Sometimes when you've had a long day, you just don't feel like cooking something fancy. At the same time, though, perhaps you still want to avoid heavily-processed foods and all their additives.
Off-the-shelf "mac and cheese" products have been sitting there for a while. The cheese has been heavily processed, it has an extremely high surface area, and the cholesterol is probably quite oxidized.
In the Cacciatore article, I detailed a wholesome meal that's incredibly easy.

As with cacciatore, I'll say the same thing here: just get stainless steel or enamelware. Multi-clad stainless is OK, as long as any aluminum is on the inside layer, where it can't touch the food.
This 5-quart pot is a very good all-around size if you cook for a family. I've used one of these, or one very much like it, for years.
You'll also need a pasta strainer or colander. You might also want a nice wooden spoon like this one.
IngredientsHere's what you'll need:
1/2 box of organic pasta (preferably "shells" or "elbow macaroni").
1 tub of soft cheddar cheese such as Merkt's (I'm curious to try this kind one day.)
2 Tbsp of butter, preferably organic
1/4 cup of milk
As for the salt, I would wait until you actually serve this dish. Then just let people sprinkle it with whatever amount of salt they prefer (or none at all).
PreparationIt's so simple.
Just prepare the organic pasta in the usual fashion: bring 1 1/2 or 2 quarts of water to a boil in a 4- or 5-quart soup pot
Then dump in the pasta. Let it boil for about 8 to 9 minutes, stirring as needed. When time's up, take the pot off the burner.
Drain & strain the pasta, then return it to the pot while the pasta is still giving off steam.
The residual heat and steam will be used to melt the cheese and butter. Add those ingredients and stir the pasta. Add up to 1/4 cup of milk. Keep stirring until the pasta gets covered with cheese uniformly.
ServingThere's nothing special you really have to do; just eat the mac & cheese (or shells & cheese).
If you prefer, serve it with some nitrite-free hot dogs. You could even slice up the [cooked] franks and throw them in with the mac & cheese. It's always a good idea to add veggies to a meal, so maybe consider some broccoli.
ConclusionThis is ridiculously easy. If you can cook pasta, then you can make this recipe.
